Three cheese mix, grilled on Irrewarra toast

This is an absolutely delicious lunch (or light dinner) served with a green salad and a glass of wine or beer. We always had it on the menu at our cafe. This is enough to place in a container and store in the fridge for an instant very impressive lunch.


250g Mozzarella cheese
250g Vintage cheddar, we love Mainland or Pyengana
150g Parmigiano-Reggiano
One medium brown onion very finely chopped
Flat leaved parsley and chives finely chopped, about a handful


Grate all the cheeses and mix. Mix in chopped onion and herbs.

For one serve: Toast both sides of two slices of Sesame Wholewheat, Breakfast Seed or Soy and Seed Superloaf. Place under grill on foil sheet and cover with the Cheese mix. Make sure you cover the crusts so they don’t burn. With the grill on medium heat, grill until the cheese is bubbling and browning. Serve with a dressed green salad.
