Recipe: Caesar Salad Sandwich

Try this mouthwatering new sandwich recipe to freshen up your lunchtime routine!

We've used our new Sourdough Ciabatta Breadstick as the base for this ultra- savoury, moreish sandwich – an elevated take on the classic Caesar Salad.

Stacked with crispy bacon, jammy eggs and plenty of parmesan, it's perfect for when you need something a little more than simply greens to get you through the day. And who needs croutons when you've got handmade sourdough, right?

Switching from our much-loved Ciabatta Rolls to a Ciabatta Breadstick has not only eliminated all plastic packaging from our sourdough range, but also allows you to choose the length of your own rolls (and even make a mega sandwich if you want).

Caesar Salad Sandwich on Irrewarra Sourdough

Ingredients

- Irrewarra Sourdough Ciabatta Breadstick, cut into four rolls then sliced open

- Cultured butter

- 4 anchovies (we love Ortiz, but any good supermarket brands will suit)

- 4 free-range eggs

- 8 rashers of good quality smoked streaky bacon

- Baby cos lettuce

- Plenty of mayonnaise (homemade or store bought – we like Best Foods Mayo)

- Parmesan cheese, shaved

- Lemon juice

- Optional: 1 free range chicken breast, poached or pan-fried

Method

Add eggs to boiling water and cook for approximately seven minutes, until just firm. Once cooled slightly, shell and cut into quarters. 

Pan-fry bacon until crispy – but not too crispy! Roughly chop and set aside.

If you're using chicken, poach or pan-fry. Once cool enough to handle, cut into medium chunks.

Spread the rolls with a good cultured butter – we love Girgar, Tatura or Lurpak from the supermarket, or artisan cultured butter from our local friends at Schulz Organic Dairy. 

Add a cos lettuce leaf to each roll, then pile on your eggs, bacon, anchovies and chicken (if using). Add a generous handful of parmesan cheese to each roll.

Mix a little lemon juice into your mayo of choice to make it slightly more runny, then drizzle on top.

Season with salt flakes and cracked pepper. Enjoy!
